Lemon Bars: Delicious Easter Treats

Lemon bars are a family favorite for a super easy dessert! I started adding coconut a few years ago and it really brings the bars up a notch! They also freeze very well: I cut them into squares and freeze in small freezer bags. Easy to pop out for company. Don’t substitute the fresh lemon juice for the best flavor.

First Things First: Preheat oven to 350 degrees F


½ cup powdered sugar

2 cups flour

2 soft sticks of butter

½ cup coconut

Combine powdered sugar & flour. Cut into two soft sticks of butter. Add coconut and mix gently. Place all ingredients into a 9×13 pans and mix and press down well to form a crust.

Bake 25 minutes


4 eggs, beaten

2 cups sugar

½ cup fresh (always use fresh) lemon juice

½ teaspoon baking powder

Beat all ingredients. Pour over baked crust and return to oven and bake an additional 25-30 minutes. Top with powdered sugar while warm. Cool & cut into bars.

Looks nice to serve in small white paper cups, especially if transporting
