The wind is whistling, the sun is shining and we are definitely feeling the first hints of Fall as we tour Vista homes and North County real estate! On days like these, I think back to some of my favorite recipes and realize that some simply must be shared!
Try these Peanut Butter Balls and let me know how you like them – they are great to have on hand as the holiday season approaches. Although they taste so good, you may find yourself whipping up more than a few batches! Peanut butter balls really do seem to be a favorite and they keep so well! In case you have trouble finding it, parafin wax is found with the canning or baking items at the regular grocery store and is sometimes called household wax.

Peanut Butter Balls
2 Tbs. Butter, melted
1 cup Chunky Peanut Butter (I use Skippy Extra Chunky from Costco)
1 cup Powdered Sugar
2 cups Rice Krispies
8 oz. Chocolate
Mix above ingredients together, adding Krispies in last and stir gently (do not crush Krispies). Roll into 3/4″ balls (you may need to wash your hands repeatedly during this part). Melt 8 oz. (1.5 cups) chocolate with 1/3 cake parafin wax in saucepan over very low heat. Dip balls in chocolate, drain well and place on wax paper covered cookie sheet. Chill until firm and store in plastic bag in refrigerator until ready to serve. Can be frozen, too. Makes 30-35 balls.
